One of my ‘go to’ family favourites. Great hot or cold, with or without butter, it’s great for afternoon tea or toasted for breakfast. Yum!
2 C plain flour, 3/4 C sugar, 3 t baking powder, 1/2 t baking soda, 1t salt, 1/2 t cinnamon, 1/4 t all spice or mixed spice, 1/8 t cloves (all spices are ground) 1/8 t nutmeg, 1 egg, 2 T margarine, 1 small tin pie apple. Place all dry ingredients together with egg and marg, mix on low, add the tin of apple, mix vigorously until majority of lumps disappear. Bake in loaf pan, preheated oven, 180 c for 50 min fan forced electric. Credit: Kitchen Aid. The original recipe called for 1 cup applesauce but the whole tin gives you a really moist loaf. It barely lasts a day in my house. It’s also more effectively mixed with a KitchenAid, but if you don’t have one I would Bamix the tin apples first. Batter should be lumpy/dropping consistency. My daughter is lactose intolerant so we use dairy free margarine so she can enjoy it too.
